Poseidon's Vanilla Bean Creme Brulee Recipe - YUM!
Creme Brûlée, also known as burnt cream, crema catalana, or Trinity cream is a dessert consisting of a rich custard base topped with a contrasting layer of hard caramel. It is normally served at room temperature. The custard base is traditionally flavored with vanilla, but can have a variety of other flavorings. (courtesy wikipedia)
Ingredients: 20 Egg Yolks 1 Cup Sugar (granulated white) 2 Each Vanilla Beans (split & seeds removed from pod) ½ gallon (64 oz.) Manufacturing Cream 2 Tablespoons Vanilla Extract
1. Using a large sauce pot, scald the cream, extract, vanilla beans and seeds. 2. In a large stainless steel mixing bowl, whisk the yolks and sugar. Set aside. 3. Once the cream is heated, remove the empty pods and discard. 4. Slowly temper hot cream into sugar and yolk mixture. Skim excess bubbles. 5. Pour the warm mixture into crème brulee dishes, about ¼ “ from top of rim. 6. Place the dishes into a water bath and bake in a preheated 350’F oven for 25 minutes. 7. Check to see if custard is set. If not, bake an additional 5 minutes or until set. 8. Remove and cool. 9. To serve, sprinkle cold custard with sugar in the raw and using a blow torch caramelize to a medium dark brown. 10. Garnish with a raspberry and mint.
