Crispy Brussels Sprouts, Pancetta Casserole w/ Toasted Almonds & Blue Cheese - Serves 2
One of the most popular vegetables served at The Poseidon Del Mar is Brussels Sprouts. We serve this lovely vegetable with our Natural Bone-in Pork Chop, Short Ribs and as an a la carte side-dish sauteed with Pancetta.

Ingredients: - 1 lb. Brussels Sprouts (cleaned, trimmed and sliced into halves) - 4 oz. Pancetta diced in small cubes & roasted - 4 tbsp. Garlic butter - 5 fl oz. Cooking white wine - 1/4 cup Toasted sliced almond - 4 tbsp. Boursin Cheese herb & garlic - Salt & Pepper - to taste
Directions: In a cast iron casserole over high heat, saute the Brussels Sprouts and Pancetta in the garlic butter. Deglaze with the cooking white wine. Season with salt and pepper to taste. Crumble the Boursin Cheese and toasted almonds on the top. To get the best results, finish the dish by melting the Boursin Cheese under a broiler at 500 degree Fahrenheit in an oven safe dish for approximately 2 minutes or until the cheese melts (a kitchen torch can also be used).
